Plant-based cooking!

 

I made Gyoza. But not just any Gyoza. They are vegan Gyoza without any meet or animal products!

Cooking Ingredients.

Tofu   300g

Dried shiitake mushrooms    8g (before rehydrating)

1 onion

1/4 of a cabbage

Chinese chives   1/2 bunch

garlic, minced    15 g

Ginger, minced   15g

potato starch    5g

Gyoza dumpling skins    30 sheets

Salt   5g (for salting)

Mixed miso    10g

soy sauce   1 tbsp.

1 tbsp sesame oil.

Preparation

Wrap tofu in a clean dish towel, weigh down with a weight and let drain for 2 hours.

Soak dried shiitake mushrooms in water for 30 minutes.

1. Make ame-iro onion

In a frying pan, add oil (not included in the quantity) and sauté chopped onions for 15 minutes until they become candy brown.

2. Salt cabbage and Chinese chives to release water.

Chop cabbage and Chinese chives, sprinkle with salt, and mix well. 10 minutes later, when water comes out, squeeze water lightly and discard the water.

3. Saute tofu and shiitake mushrooms.

Fry the drained tofu for about 5 minutes while crushing it with a wooden spatula to make a fine minced minced tofu. When browned and flaky, add finely chopped shiitake mushrooms, soybean paste, soy sauce, and sesame oil, and stir-fry for another 1-2 minutes.

4. Combine all the ingredients for the seeds together and mix.

Combine all the ingredients for the seeds in the same bowl and mix well.

 

5. Wrap the seeds in the skin

Wrap a spoonful of the seeds in the dumpling skin.

 

6. Steam the dumplings in a frying pan.

Place the gyoza in the frying pan, add 100 cc of hot water (not included in the quantity), cover with a lid, and steam over medium heat for about 5 minutes. Open the lid when you can see that the skin has become transparent and you can start to hear crackling as the water runs out.

 

7. Drizzle sesame oil and brown the dumplings.

Drizzle sesame oil (not included in the quantity) into the frying pan and brown the gyoza.

It was difficult to make, but it looked delicious. It was very tasty and hearty without any meat. I live alone and my chances of getting vegetables have been decreasing lately. So, I felt this was an opportunity to get more vegetables and eat healthier. I wanted to make it again!
